Dylan was born and raised in the suburbs of Chicago.  As a young student, Dylan developed a strong passion for classical trumpet. Dylan continued his musical studies at Depaul University under numerous world class musicians.  Though Dylan is not an active musician anymore, he believes strongly that his experiences as a musician  greatly shaped his life and career. Seeking a change after his graduation, Dylan began working at Lillie's Q and eventually went to work at Stephanie Izard's newest restaurant, Little Goat Diner.   In the summer of 2013, Dylan began an internship at Pipeworks Brewing Co. and shortly after accepted a full time position where he learned from some of the brightest members of the Chicago brewing industry.  Dylan recently decided to leave Pipeworks to pursue further study in bars and bartending.  He currently works at BellyQ in a part time capacity, but is dedicating most of his energy to restructuring Lillie's Q bar program as their co-bar manager.

That's actually how we met Dylan last year around this time and are SO glad we did. We are looking forward to tasting many more of Dylan's drinks. What's your favorite cocktail to make? 

Theres nothing more beautiful than a gorgeous bouquet of mint on a mound of crushed ice. 

Favorite unconventional ingredient when creating a cocktail?

Don't know if I have a favorite, but I had some fun making drinks with pickled beet juice recently.  

If you were reincarnated as an ice cream flavor, what would it be?

Interstellar.  I needed a drink after that one :)
